Mouassine was laid out in the sixteenth century as a Saadian quarter, with the mosque, its fountain, a hammam, and a madrasa built as one complex. The fountain still has three troughs for animals and one bay for people, which tells you how the street worked.

You go into two fondouks where artisans still hold the ground-floor cells, and up into the Douiria, a small guest apartment restored to its painted cedar ceilings and cut plaster. Then the dyers' souk, where wool comes out of the vats and goes up on poles across the lane to dry.

Three hours on your feet, with tea in the middle. Colour and light are at their best between ten and noon.
